*You will need a Pizzelle iron, which is similar to a waffle iron. It makes thin wafer-like cookies with snowflake designs, an Italian holiday tradition, but they are yummy anytime of the year!

- In a medium bowl, beat the eggs with a mixer or whisk. Add the sugar, butter, almond and vanilla extract, mix well. Stir in the flour and baking powder.
- Heat pizzelle iron. Drop batter by teaspoonfuls onto the center of the patterns, close the lid and cook for about 45-55 seconds. However, temperatures may vary. Remove cookies carefully from the iron and cool on wire racks or parchment paper. Sprinkle lightly with confectioner sugar.
Modifications:
Some recipes use anise, instead of the almond or vanilla. It is your own preference, but I
decided to try the almond and vanilla years ago, since I am not a fan of anise and I love
the taste! The confectioner sugar sprinkle is also optional.
