With July4th just around the corner, I thought it would be a good time to share some delicious recipes you can serve at your July4th celebration. I asked my Mom to share some of her favorite recipes since she throws the best July4th parties out in Healdsburg.
Grilled Corn Salad
Ingredients:
- Juice of 3 limes
- 2 tsp. ground cumin
- 1 tsp. mild chili powder
- 3/4 cup extra-virgin olive oil, plus more
for brushing - Sea salt and freshly ground pepper, to taste
- 6 ears of corn, husks and silks removed
- 3 cups cherry tomatoes, stemmed and halved
- 1/2 cup diced red onion
- 1/2 cup chopped fresh cilantro
- 1/4 lb. crumbled blue cheese or feta
- 2 tsp. cumin seeds
Preparation: In a bowl, whisk together the lime juice, ground cumin and chili powder. Pour in the 3/4 cup olive oil in a slow, steady stream while whisking to make a vinaigrette. Season with salt and pepper. Set aside.
Prepare a medium-hot fire in a grill. Brush a little olive oil on each ear of corn. Grill the corn, turning the ears often so they cook evenly, until lightly charred, about 10 minutes.
Remove kernels with a kernel cutter. Put the kernels in a large bowl. Add the tomatoes, onion, cilantro, cheese and the vinaigrette and toss to coat evenly. Transfer the salad to a platter and sprinkle with the cumin seeds. Serve immediately. Serves 8.
Freddie’s Flank Steak
My dad makes a wonderful flank steak. All you do is marinate the steak in Soy Vay Veri Veri Teriayki (which can be found at Whole Foods and other grocery stores) for 3-6 hours (the longer the better and turn every 30 minutes). Cook about 5-6 minutes each side for medium-rare.
Fresh Berry Crisp
Ingredients:
- 6 cups fresh berries (such as blackberries, raspberries, strawberries, blueberries)
- 2 Tbs fresh lemon juice
Toppings:
- 3/4 cup all purpose flour
- ¾ cup packed brown sugar
- ½ tsp cinnamon
- 4 tbs unsalted butter or margarine
- 1/3 cup finely chopped pecans
Preparation: Preheat an oven to 375°F. Grease a shallow 9 x 13 baking dish with butter or margarine, or spray with vegetable cooking spray. Spread the berries evenly over the bottom of the prepared baking dish and sprinkle with the lemon juice. In a bowl, using a pastry blender or fork, mix together the brown sugar, flour, cinnamon, butter and pecans until well combined. Sprinkle evenly over the berries. Bake until the top is golden and the berries are bubbling, about 30 minutes. Serve hot or warm with a side of ice cream (if desired). Serves 8
